Organic, dry, linear proprietary, yield per hectare 400-500 kg per hectare.

Terrain

Sandy hills with stony subsoil at a distance of 3km. from the sea.

Climate

Mediterranean with easterly winds, mild weather, and the temperature difference between day and night is 13-15 degrees C.

Harvest

By hand, end of August.

Vinification

Prefermentative cryoextraction at low temperature and fermentation with natives yeasts in an amphora . During fermentation it is bottled and fermentation continues in the bottle. It is not filtered and does not undergo any treatment before bottling.

Organoleptic characteristics

Cloudy pale gold with persistent tiny fizz. High intensities, acidity, mineral dimension, chalk and limestone. Pasta-like appearances, with bread crust and brioche, floral, white-fleshed pome fruit, notes of spices and herbs.
