Vinification technique: pre-fermentation and fermentation in oak barrels of 225 liters openly with indigenous yeasts, long fermentation at controlled temperature and pressing the marc by hand. Maturing with lees for 18 months in French oak barrels. It is being bottled unfiltered and without any other treatment

Description: Shiny red purple color, intense and complex bouquet earthy discreet animality while as dematerializes releases a complex bouquet of ripe red and black fruits, cedar, dried plums and figs, pine honey, coffee and cocoa, almonds and spices. Gentle tannins, balanced acidity, plenty of fruit, complex and exuberant aftertaste.
Serving suggestions:white and red meat , BBQ, hunting, wild mushrooms, cheese and sausage ripening. Enjoy after transfusion to carafe.
